The Original Eichsfelder Stracke is one of the traditional sausage specialties that have been produced in Eichsfeld for centuries. The Stracke, a raw pork sausage, is similar to Italian salami and tastes best on fresh, hearty farmhouse bread, garnished with a few slices of Gherkin.
