Limburger: Originally created by Belgian Trappist monks, Limburger was adopted by cheesemakers in the Allgäu region of Bavaria in the 19th century. Its strong aroma and soft, spreadable texture make it a polarizing favorite — best enjoyed on dark bread with raw onion.

Tilsiter: First made by Dutch and Swiss immigrants in the Prussian town of Tilsit (now Sovetsk, Russia) in the 1820s. German Tilsiter is semi-firm with a tangy, full-bodied flavor and small irregular holes. Production later spread to the Allgäu region.

Harzer Käse: A low-fat sour milk cheese from the Harz mountain region. High in protein, very low in fat, and unmistakable in aroma — a true acquired taste and a beloved Abendbrot staple.

Quark: Germany's most-used fresh dairy product. Technically a fresh acid-set cheese, Quark has a creamy texture between yogurt and cream cheese. It's essential for Käsekuchen (German cheesecake), Kräuterquark dips, and baking.

Q: What is Quark, and is it the same as yogurt or cream cheese?

A: Quark is a fresh acid-set cheese made from soured milk. In Germany it's thinner and creamier than cream cheese but thicker than yogurt. It comes in three standard fat levels: Magerquark (low-fat), regular (20% fat in dry mass), and Sahnequark (40% fat). Germans use it in cheesecakes, herb dips, baking, and as a breakfast topping.

Q: Why can't I find Limburger or Tilsiter in regular US grocery stores?

A: These are traditional European washed-rind and semi-firm cheeses that aren't widely produced outside of Germany. A few American dairies make Limburger, but the authentic German versions from Allgäu producers like Champignon-Hofmeister have a different flavor profile tied to local milk and aging methods.

Q: Is Harzer Käse really as strong-smelling as people say?

A: Yes — Harzer Käse is one of Germany's most pungent cheeses. But it's also one of the healthiest: very low in fat (less than 1%) and high in protein. It's traditionally eaten with bread, butter, and onions, often accompanied by a Kümmel (caraway schnapps). The aroma is much stronger than the taste.
